2.5kg Short Beef Ribs Pre Cut

When braised into submission, beef short ribs become meltingly tender and fortify their cooking liquid with thickening collagen. But they're also delicious when sliced thin (with or without the bones) and cooked quickly over high heat. Perfect marinated for the BBQ.

Dr Pepper Beef Short Ribs 

Ingredients 

2 Falleninch Farm Short ribs

3 Stalks Celery

1 Onion

2 Carrots

½ bunch Fresh thyme

6 Bay leaves

Salt and pepper

Chicken stock

Chipoltle peppers in adobo sauce (available on amazon - can be substituted with smoked paprika)

Dr Pepper

Method

  • Salt and pepper short ribs

  • 2.Brown the ribs on all sides Inc sides

  • Chop 1 onion, 2 carrots, 3 stalks celery and make a bed in a roasting pan

  • Add in 6 Bay leaves and fresh thyme

  • Add 6-8 chipotle peppers (gives it a sweet smokey flavour can be substituted for smoked paprika)

  • Place the ribs on top of bed in roasting pan

  • Gill the pan with chicken stock 1/3 of the way up the pan and the rest with Dr Pepper until fully covered.

  • Put in the oven for 4hrs at 160°c

  • Once you bring it out let the ribs rest and drain the liquid.

  • Add 2 cans of Dr pepper to the cooking liquid and a knob of butter but not too much reduce down on a low heat to a sticky sauce (consistency is a preference) 

  • Shred meat off the bone and mix in with sauce

The meat will be soft enough to fall off the bone, you could even the shred meat off the bone and mix through with sauce reduction
