When choosing a steak, sirloin is a fine choice due to its tasty, melt-in-the-mouth succulence. Good Scottish sirloin has just the right amount of fat and nice marbling.

Cooking tip

Do you want to know the secret of perfectly fried steak? Pre-heat a large heavy-bottomed frying pan or skillet (cast iron if you have one) over high heat for 5 minutes. Generously season steaks with salt and pepper. Add 1/2 teaspoon butter to the pan, then immediately top with one steak. Repeat with another 1/2 teaspoon of butter and the second steak. Leave to cook without moving the steaks until a golden-brown crust forms on the bottom, around 3 to 4 minutes. Turn and cook 2 minutes more for rare or 3 to 4 minutes more for medium-rare (or longer if preferred). Transfer steaks to a board or platter to let rest for 5 minutes before serving to allow the juices that have been drawn to the surface to relax back into the meat.

What price is ....gristle?
Have placed several orders now for their Sirloin steaks (10oz) the price is good but the quality very inconsistent. The butchers are leaving gristle etc on th steaks, sometimes as much as an ounce or more on each portion. The butchering could be far better. I’ll give them one more chance to get it right. Note sent a previous review but was not printed.
